Snow’s Heritage Acres CSA – Week 5 – June 14, 2008

Hello from the farm!! We are very, very wet right now. We do so appreciate the moisture…it definitely beats watering any day…but we do need to dry out for a little while. Some of the plants are starting to yellow due to to much moisture. It also makes it very difficult to weed the growing beds or to plant out anything that needs to go out.

We have been working a lot in the greenhouse this week potting on our winter squashes into 4 inch growing blocks. This gives us an extra 10 days of growing before we have to put these in the ground. We were able to find a dry spot to plant out our zucchini and summer squash and we planted cucumber transplants into pots and set along the greenhouse fence so they’d have a place to climb. One thing we have learned as farmers is that the weather will always cause you to find ingenious ways of doing things. We usually plant lettuce out 1x a week but we are finding that to be an impossibility right now. We may just have to harvest it right out of their growing blocks and have more of a lettuce mix for a week or two.

The summer veggies are starting to produce so you will start to see more than just salad type items in your bags in the next few weeks. We will have zucchini and cucumbers 1st followed by green beans and then peppers and tomatoes in about another 4 weeks. We have a really good crop of plums on the trees this year so we will be adding them to the shares about the time the blackberries come on or in about 3 to 4 weeks.

We have had a lot of inquiries into our CSA program over the last few weeks and since we have planted overage for the summer/fall we are making available a few summer/fall shares. So if you know of anyone who would be interested, please pass along our farm info to them.

Heritage Farms, who supplies the poultry, pork, and raw milk items to you, has asked us to let you know that they will have: Labenah, Ricotta and a limited quantity of Feta cheeses this week. We are enjoying getting to know all of you either through the pick-ups or your farm visits. If you haven’t made it up to the farm, or if you have and would like to come again, we’d love to have you. Just let us know ahead of time of when you would like to come so we can be sure to be here.

In this week’s share:

Lettuce, Swiss chard, Baby Beets w/tops, Green Onions, Sugar Snap Peas (a hand full), Broccoli Pieces, and Strawberries.

How to store this week’s produce:

Lettuce and Swiss chard: Remove root ends and rinse in cold water. If you have a salad spinner, spin dry. If not, shake off as much excess water as possible. Store in a closed bag in the refrigerator. Being fresh, these items will keep for several weeks as long as they are stored without excess moisture.
Baby Beets: These will store best if the tops are removed; store in a sealed bag in the refrigerator.
Sugar Snap Peas: Wash and then snap off top end and pull string to bottom and snap off bottom end. These are great to eat raw or to put in a salad.
Green or Pearl Onions: Store in a sealed bag in the refrigerator; wash, remove roots and use as much of the top as you want.
Broccoli pieces: Wash and store in a sealed bag in the refrigerator.
Strawberries: Store in the refrigerator in the container we send them in. Do not wash them or get them wet until you are ready to use them.

**We field wash the produce only so please rewash before you use it!!**

 

Recipes for this week:

Strawberry Orange Chicken Pasta Salad

1/3 cup fat free poppy seed dressing
¼ cup fat free mayonnaise
16 oz Penne pasta; cooked, drained, and cooled
2 cups chicken cut up into bite sized pieces
¼ cup sliced green onion
1- 11 oz can Mandarin oranges, drained
1 cup sliced strawberries
2 cups lettuce/salad greens

Mix together poppy seed dressing and mayonnaise. Stir pasta and chicken into mixture. Gently fold in the onion, oranges, and strawberries. Serve on a bed of lettuce/salad greens.

Coming on June 21st: Lettuce, Baby Beets, Green Onions, sugar snap peas, broccoli, possibly cauliflower, possibly zucchini, and strawberries (these will be iffy).
