Snow’s Heritage Acres CSA – Week 3 – May 31, 2008

Hello from the farm!! It is so hard to believe that it is the last day of May. This year has seemed so backwards with the strange weather we have had this spring. I don’t think that we have ever been just starting the strawberry season at the 1st of June…we are usually finishing it by this time.

On the strawberries, it looks like you will get a full portion in your share this week – a qt for the full shares and a pint for the ½ shares. There is a good possibility that we will even have extras for you to purchase. The cost is $3.00/qt. If you want any extras just let me know by Saturday a.m. We are compiling a list for those who want to u-pick, so if you want to be on that list so we can schedule you a day to come, let me know.

We will be putting “surround”, a kaolin clay product on the fruit trees this week to protect them from codling moths and a few other pests that seem to really like them. This is the only product we spray and we do it only because it is natural and a mineral. So, if you visit the farm, you will see white fruit trees due to the film that this product puts on the leaves. It makes a gritty layer that the bugs do not like. This also helps to protect from sun scald. We definitely do not grow “perfect” looking fruit but we do grow healthy fruit.

If you have ever thought it would be great fun to volunteer some time on the farm to see how your food is produced this would be the time to do it. We seem to meet ourselves coming and going at this time of year. We are continuing with succession plantings of some crops…mainly carrots, beans, and sweet corn…we are trying to finish putting crops in the ground, the greenhouse is being utilized to start winter squash, the mowing that needs to be done is way behind schedule, and we are cutting hay to use as mulch, compost, and to bale for winter feed for the animals. There are never enough hours in the day but eventually we do catch up albeit it is usually in the winter!

In this week’s share:

Lettuce, Salad Greens (these are bigger this week so you may want to cook them – see recipe below), Spinach, Swiss chard, Baby Beets w/tops, Baby Carrots w/tops, Radishes, and Strawberries.

How to store this week’s produce:

Lettuce and Salad Greens: Remove root ends and rinse in cold water. If you have a salad spinner, spin dry. If not, shake off as much excess water as possible. Store in a closed bag in the refrigerator. Being fresh, these items will keep for several weeks as long as they are stored without excess moisture.
Baby Beets, radishes, and Carrots: These will store best if the tops are removed; the carrots tops can be juiced and the beet greens can be cooked; store in a sealed bag in the refrigerator.
Strawberries: Store in the refrigerator in the container we send them in. Do not wash them or get them wet until you are ready to use them.

**We field wash the produce only so please rewash before you use it!!**

Recipes for this week:

Mixed Greens and Potatoes

¾ lb of mixed greens; (mixed bunch of greens, beet tops, spinach, chard, etc)

1 T. bacon drippings 1/4 tsp. sugar
1 c. diced potatoes dash black pepper
1/8 c. boiling water dash cayenne pepper
3/4 tsp. salt 3 strips crisp bacon

Cook bacon until crisp; reserve 1 T of the drippings. Wash greens in warm water. Rinse 3 times in cold water. Put bacon drippings into 2-qt saucepan. Add potatoes, boiling water, salt, and sugar. Cover; cook 10 minutes or until tender crisp. If using your “bunched greens” add them first and cook 5 minutes. Add spinach, beets tops, chard, etc and cook 4-5 minutes longer. Add pepper and cayenne. Toss lightly. Top with crisp bacon. Serve with creamy mayonnaise sauce. (See recipe below).

Creamy Mayonnaise Sauce

9 T. butter 1 ½ c. milk
¾ c. flour ½ c. mayonnaise
1 tsp. salt ½ T. lemon juice
¼ tsp. pepper ½ T. chives

Melt butter and stir in flour and seasonings. Gradually add milk, stirring constantly. Boil several minutes. Remove from heat and add remaining ingredients. Pass with greens.

Strawberry Banana Smoothie

2 c. strawberries 1 c. sliced bananas
2 c. orange juice ½ c. powdered milk

Combine everything in a blender and process until smooth.
Coming on June 7th: Lettuce, Salad Greens, Swiss chard, Spinach, Baby Beets, Green Onions, a few sugar snap peas, and strawberries (will include the recipe for Travis’s strawberry pie next week). (This is subject to change but it is what we are projecting will be ready)
